Garlic Sweet Potato & Black Bean Bowl

Serves 1. With some leftover ingredients.

Ingredients:

  • 1 Sweet Potato

  • garlic powder, cumin, salt & pepper

  • Spinach

  • 1/2 cup any rice or microwavable bagged rice

  • 1 can black beans

  • optional: cilantro lime sauce of choice

Directions:

  1. Preheat oven to 425 degrees F

  2. Dice 1/2 of one large sweet potato into cubes

  3. Toss potato in olive oil, 1 tsp. garlic powder, 1/2 tsp cumin, and sprinkle of salt & pepper

  4. Line a baking sheet and place potatoes in over for 12-15 mins.

  5. Make 1/2 cup of any rice on stovetop, or get microwavable bags of rice like myself, because convenience is nice sometimes

  6. Get a bigger bowl and line the bottom with a big handful of spinach

  7. Rinse one can of black beans and place 1/2 cup in the bowl with spinach

  8. Take potatoes out of oven and place them in the rice, spinach, black bean mix

  9. Optional: cilantro lime dressing of your choosing

    -although normally Iā€™m not a HUGE mayo fan, this added just enough flavor!
